Extra Virgin Olive Oil Pago de Valdecuevas

These potatoes are very easy to make, they have endless possibilities and are spectacular. We can use them as a side dish for meats, fish, for a Galician-style octopus if we add a little paprika or, as in this case, fill them with your favorite ingredients and use them as a main course.

The important thing is to use our Pago de Valdecuevas Arbequina variety oil because they will bring a spectacular aroma.

The quantity of ingredients because we can make the ones we need depending on whether they are going to be a side dish or a main course.

Ingredients:

  • Well washed and rather small new potato
  • Extra Virgin Olive Oil Pago de Valdecuevas
  • Salt and pepper
  • Filling of this recipe: ham, tomato, zucchini and grated cheese
  • Dressing of this recipe: Extra Virgin Olive Oil Pago de Valdecuevas and fresh basil

To prepare the potatoes, the key is to make cuts without reaching the end. If you don’t handle knives very well, you can pierce the potato very close to the base with a wooden skewer. When you cut the slices, the skewer will act as a stop and they will be perfect.

We slice the potatoes, without reaching the end. Then we place them on a baking sheet or air-fryer basket, season with salt and pepper and drizzle with Pago de Valdecuevas Oil. We cook at 180°C (350°F) for 40 minutes in the oven or Air Fryer.

If we want them stuffed. After 30 minutes, we take them out and, being careful not to burn ourselves, add the filling (ham, bacon, cheese…).

Once cooked, we take them out and prepare a good dressing with Pago de Valdecuevas Oil and basil (paprika, thyme, Provençal herbs…), drizzle and enjoy!
