INGREDIENTS:

For the cream

  • 2 cups almond milk
  • 15 raw almonds
  • 1 blanched garlic clove
  • 2 tablespoons Jerez vinegar
  • 1 pinch of salt
  • 3 tablespoons of Arbequina oil

For the garnish.

  • 4 fresh grapes
  • 1 smoked sardine in cubes
  • Candied leek
  • Arbequina oil.

PREPARATION:

Step 1: Mash all the ingredients of the cream and let it rest for 1 hour in the refrigerator *Rectify salt and garlic to taste, in our case we blanch the garlic so that it does not repeat. Step 2: Cut the smoked sardine into cubes and cut the grapes in half Step 3: Decorate the deep plate with the sardine, the leek and the grape and serve the garlic white in a gravy boat.
