Green gazpacho + grilled octopus & yucca chips
INGREDIENTS:
For the gazpacho.
- 1 green bell pepper
- 1 small fresh jalapeño
- 8 raw cashews
- 1 blanched garlic clove
- 4 tablespoons Arbequina oil
- 2 tablespoons apple cider vinegar
- Handful of fresh cilantro and chives
- Juice of 1 lime
For the garnish.
- 1 cooked octopus leg
- Arbequina oil caviar and sweet paprika
- Yucca chips (air fryer)
PREPARATION:
STEP BY STEP: Step 1: Blend all the gazpacho ingredients and then pass through a food mill, let it rest in the refrigerator for 1 hour. Step 2: Sear the octopus on the grill and cut into thin slices. Step 3: Plate to taste with a good drizzle of oil. ** Approximate time : 40 min
