Green gazpacho + grilled octopus & yucca chips

INGREDIENTS:

For the gazpacho.

  • 1 green bell pepper
  • 1 small fresh jalapeño
  • 8 raw cashews
  • 1 blanched garlic clove
  • 4 tablespoons Arbequina oil
  • 2 tablespoons apple cider vinegar
  • Handful of fresh cilantro and chives
  • Juice of 1 lime

For the garnish.

  • 1 cooked octopus leg
  • Arbequina oil caviar and sweet paprika
  • Yucca chips (air fryer)

PREPARATION:

STEP BY STEP: Step 1: Blend all the gazpacho ingredients and then pass through a food mill, let it rest in the refrigerator for 1 hour. Step 2: Sear the octopus on the grill and cut into thin slices. Step 3: Plate to taste with a good drizzle of oil. ** Approximate time : 40 min
